My toddler and baby ate this tuna salad and ate it well. The toddler even asked for seconds – “this is really yummy mummyâ€. I think a little tear came down my face. We are getting somewhere!
I don’t think I did anything particularly amazing to this salad, but thought I’d share it in case it somehow contains the secret to toddlers happily eating legumes and raw veggies!!

Ingredients
- 1 tin chickpeas drained and rinsed
- 1 tin lentils drained and rinsed
- 1 avocado thinly slices
- 2 tomatos diced
- 2 carrots grated
- 4 spring onions peeled and thinly sliced
- 1 medium sized tin of tuna
- large handful of baby spinach
Dressing:
- 1 tbls of olive oil
- 1 tbls of apple cider vinegar
- 1 teaspoon of dijon mustard

Instructions
- Put all the salad ingredients in a bowl and mix around with your hands!
- Mix dressing ingredients together and then drizzle over the salad.

Then cross your fingers if you’re feeding it to your kids – hopefully they devour it!
