A Salad Lunch for EVERYONE – GF, DF
Ingredients
  • 1 tin chickpeasdrained and rinsed
  • 1 tin lentilsdrained and rinsed
  • 1 avocadothinly slices
  • 2 tomatosdiced
  • 2 carrotsgrated
  • 4 spring onionspeeled and thinly sliced
  • 1 medium sized tin of tuna
  • large handful of baby spinach
Dressing:
  • 1tbls of olive oil
  • 1tbls of apple cider vinegar
  • 1teaspoon of dijon mustard
Instructions
  1. Put all the salad ingredients in a bowl and mix around with your hands!
  2. Mix dressing ingredients together and then drizzle over the salad.
