A week ago I asked my Facebook followers which meal they’d like healthy ideas for. Lunch seemed to jump out and I guess that’s because a lot of us race out the door for work in the morning and then start thinking about lunch when they get hungry. Then they go to a food court/cafe/pub(?) and eat something dense that will FILL US UP!
Oh I have been in that pattern for sooooo long.
But I have a new way of thinking about lunch. I’m not eating bread, you see. I’m trying to think of ways that I can fill up, not get tired afterwards (like I would with bread) and that will give me stacks of energy for the afternoon. Obviously, it also has to taste great.
So here’s an idea for those that like to prepare the night before. Make a cheeky homemade guacamole – it can dress up ANYTHING!

- 1 avocado
- 1/4 red onion very thinly sliced
- Juice of half a lemon
- salt and pepper to season

- Just smash it all together
- Today I added it to 100% brown rice Rice Crackers and sliced a tomato on top (I get the rice cakes from Coles). Yum, it tastes like salsa. But I’m still feeling a bit peckish so I’m going to mix more guac through some mixed leaves, cherry tomatoes and tuna.
Really the opportunities are endless – you could add feta/tuna/chicken to the rice cakes if you love cheese or want some protein.
I might end this lunch with one of my healthy chocolate crackles (will bring you that recipe soon).
