Avocado Salsa Lunch (Gluten Free, Dairy Free)
Ingredients
  • 1 avocado
  • 1/4 red onionvery thinly sliced
  • Juice of half a lemon
  • salt and pepperto season
Instructions
  1. Just smash it all together
  2. Today I added it to 100% brown rice Rice Crackers and sliced a tomato on top (I get the rice cakes from Coles). Yum, it tastes like salsa. But I’m still feeling a bit peckish so I’m going to mix more guac through some mixed leaves, cherry tomatoes and tuna.
Recipe Notes

Really the opportunities are endless – you could add feta/tuna/chicken to the rice cakes if you love cheese or want some protein.
