I’m cleansing this week. At not in the bathing sense (though I’m doing that too). I am doing the Girls Gone Clean cleanse designed for busy women by Lana Purcell. It’s seven days and I’m on day 5 and I just resisted all the goodies at a kids birthday party. Yay for freaking me! It’s been a super interesting process and many epiphanies have been made, that’s for sure. I’ll no doubt write them down to inspire you (bore you?) with soon.
Anyway, Lana posted this recipe on about day 3 when she knew most of us wanted something a little more. And by god it hit the spot! Great for kids, great for adults – a total winner. It’s also gluten and dairy free.
I made mine in the thermomix but apparently a normal blender will do the job too.

- 1/2 cups sunflower seeds
- 1/4 cup desiccated coconut
- 1/2 cup pumpkin seeds
- 1/2 cup almonds
- 1/2 cup pitted dates
- 1 tablespoon coconut oil melted
- 1 tablespoon honey
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract

- Pulse the almonds, dates, sunflower seeds and pumpkin seeds a few times everything until it is mixed and clumping.
- Add the remaining ingredients and pulse again until it forms a dough consistency.
- Press into a shallow dish lined with baking paper. Spread evenly. Place in the freezer to harden up and then slice into bars.
(I had to add a little more coconut oil because it was a bit dry. Also remember to keep it in the fridge where it will stay hard).
Oh dear, so good. You will make batch after batch! Enjoy x
