Now there’s a compliment. A dish that doesn’t have a name is a favourite of my husbands. You know you’ve scraped the bottom of the barrel a few times when a ‘whatever that is’ dish is a fave! It’s really about putting random things in one pan and hoping for the best. Random things, with sausage.
Sausage mix-up dish (I know, it’s a classy name, for a real classy looking meal…)

Ingredients
- olive oil
- 4 good quality sausages sliced thickly
- 1 piece smokey bacon cut into strips (same goes with bacon – buy from a good quality butcher – just like Jamie Oliver tells you)
- 1 small red onion diced
- 1 red capsicum thinly sliced
- 8 medium sized mushrooms sliced thickly
- 1 tin diced tomatoes
- handful basil
- 8-10 kalamata olives pitted and sliced
- 1 tin of mixed beans
- crumbled feta to serve (if you fancy)

Instructions
- Drizzle some olive oil in a frypan or skillet. Cook off your bacon and onion and then add your sausages. When they are browned but not totally cooked through, add the mushroom and capsicum. Cook them until they’ve softened.
- Then add all the other ingredients and cook until nice and hot and the tomato has slightly reduced. Season with salt and pepper. Crumble some feta on top if you desire. A sliced avocado would also work nicely.

We had it along side a potato salad tonight. It hit the spot.
