I’ve tried many a granola recipe over the years.
And none were totally perfect. I wanted to use the ingredients I always had on standby and I wanted coconut flakes.

I have finally perfected my own granola recipe and am excited to share it with you!
Keep the oven low and remove when everything has browned nicely – it will harden up once it’s cooled down.
Feel free to add dried fruit or chia seeds to the mix – I have left them out because I don’t enjoy early morning ‘chia in teeth’ or the taste of dried fruit.
As I said – this is MY perfect granola.

- 2 cups raw cashews
- 1 cup sunflower seeds
- 1 cup pepitas
- 1 1/2 cups of coconut flakes
- 1 tsp cinnamon
- 2 tbls pure maple syrup
- Zest of 1 orange
Ingredients

- Mix all ingredients together and spread thinly on two lined baking trays.
- Cook in oven at 125 degrees for 40 minutes (it's all I needed but you might need longer).
- Remove from oven and let cool.
- Once cool break it apart and add 2 cups puffed buckwheat (totally optional but I find it helps it go further).
- Mix it all around and keep it in a glass jar.
Serve with yoghurt, fresh berries, as a snack on the run, on top of a smoothie bowl - the options are endless!
